Grilled cheese is one of the ultimate comfort foods. Grilled cheese and tomato soup is one of the most comforting meals I can think of. You see, I always dip my grilled cheese in tomato soup. To me it is not a grilled cheese without the bowl of steaming tomato soup sitting next to it.

I have to admit, grilled cheese sandwiches are pretty much one of the best foodie inventions ever. I mean, what's not to like about melty cheese between buttery toasted bread?! Ahhhhh, but my bloggy friends and I arent' giving you regular ol' grilled cheese sandwiches... we've made them all fancy! Since we've been on a pizza kick lately, I decided to share one of my kiddos favorite pizzas in a grilled cheese sandwich! Enjoy!
Hawaiian Pizza Grilled Cheese Sandwich
Cook Time: 8 minutes
I just realized that this is the first grilled cheese sandwich I've shared on the blog and I've been blogging for just over three years.... What kind of food blogger doesn't have a fancy grilled cheese recipe?! If you love grilled cheese, don't forget to check out these other grilled cheese sandwiches.....
Nothing truly dysfunctional, mind you - I don't keep mice in my filing drawer (or tequila, for that matter); I don't hum tunelessly to myself all day; and I don't eat salt cod casserole, durian fruit or Epoisse cheese sandwiches to work.
Margherita Pizza Grilled Cheese
Ingredients
Spread the pasta sauce across the salami.
Lay the basil on top of the pasta sauce. Then, arrange the sliced mozzarella over the basil.
Give your sandwich its other half, and place on a clean tray or lined oven-safe plate.

Grilled cheese is one of the ultimate comfort foods. Grilled cheese and tomato soup is one of the most comforting meals I can think of. You see, I always dip my grilled cheese in tomato soup. To me it is not a grilled cheese without the bowl of steaming tomato soup sitting next to it.
- 1/2 yellow onion, thinly sliced
- 4 crimini mushrooms, thinly sliced
- 4 slices crusty french bread
- 2 tablespoons butter, softened
- Heat olive oil in a pan over medium heat. Once hot cook bell peppers, mushrooms and onions until softened 3 - 5 minutes. Remove from heat.
- Use one tablespoon of butter to butter one side of each slice of bread. Sprinkle with garlic salt.
- To make one sandwich place 4 slices of pepperoni on a slice of bread. Place 2 slices of mozzarella on top. Spoon bell pepper and onion mixture over the top. Top with other slice of bread. Repeat with remaining ingredients.
- Heat remaining tablespoon of butter in a skillet. Once melted, begin grilling sandwiches. Cook until cheese is melted and bread is golden, 3 - 5 minutes. Serve hot.

- 4-6 slices of pepperoni
- Optional fillings: green peppers, spinach, onions, mushrooms any favorite pizza topping
Instructions
- Lightly butter one side of each slide of bread. Flip over butter side and cover each non-buttered side with one or two slices of cheese. Add to hot pan and cook on medium heat until bread is browned and the cheese is melted.

Dear old Dad!! While pizza grilled cheese hasn't replaced our Friday night pizza tradition, it's given me another option for a fun, healthy, and easy weekday lunch!

Hawaiian Pizza Grilled Cheese Sandwich
Cook Time: 8 minutes
- Butter
- 4 slices Canadian bacon
- 4 sandwich slices Cheddar cheese
- Butter one side of each slice of bread. Place one slice of bread butter side down onto the griddle. Carefully spread 2 tbsp. of pizza sauce over the bread slice. Top with 2 slices of Canadian bacon, 2 slices of pineapple rings and 2 slices of cheese. Remove sandwich to cutting board. Repeat process for other the sandwich.
- Once sandwiches have cooled slightly, cut in half, if desired. Serve warm.

- 1 large ripe tomato, sliced
- semi-soft cheese (mozzarella, Edam, Gouda, Fontina or Provolone would all work)
- 10 fresh basil leaves
- Spread one side of each slice of bread with the chopped tomatoes/passata (use a thin layer only - you don't want the bread to get too soggy)
- Place thin slices of cheese on each slice of bread (you need some cheese on each side to make the halves stick together when the cheese melts), then cover two of the slices with tomato and basil leaves. Sprinkle dried oregano on all the slices and then sandwich together one cheese and one tomato slice to make two sandwiches.
- Mash together the butter and minced garlic together with salt and pepper to taste. Spread both outside surfaces of each sandwich with garlic butter.
- Heat a ridged cast-iron griddle pan on the stove until it is hot, then carefully place the sandwiches in the hot pan. When both sides have good grill marks and the cheese is beginning to ooze out, remove from the pan, slice in half and serve immediately.

Ingredients

- "15 oz. Galbani® Ricotta
- 4 - 8 in. pizza crusts, precooked
- 1 sprig fresh rosemary, stemmed and finely chopped
- Pre-heat oven to 375 degrees F.
- Peel the eggplant and cut into 1/4 inch slices. Cut peppers and zucchini into 1/4 inch slices. Lay vegetables out on a baking sheet and lightly coat with olive oil. Fold to make ricotta extra fluffy. Set aside.
- Lay out the pre-baked pizza crust and lightly coat with remaining olive oil. Sprinkle one side with the chopped rosemary and remaining parmesan. Flip, and on the unseasoned side spread the ricotta mixture. Remove, cut and serve."
